Hi All,

Elaine's confimation about ProGurt is below:

Sheila

>Dear All

The yogurt starter including Lactobacillus casei appears to be just

fine. According to Natasha Trevnev's book, " Probiotics " , L.case is

a transient bacteria of the human intestine (similar to

L.bulgaricus). It is found in milk and cheese, dairy products, cow

dung, silage, and the human intestine and mouth.

From Elaine: There is little conclusive evidence of exactly what

it accomplishes but has been reported as being effective in the

treatment of certain intestinal conditions.

I have never pretended to have expertise in this field altho I spent

considerable time in attempting to prepare a chapter on probiotics

to be placed in my first book in l987. I gave up after a year of

intense library work because nothing conclusive could be said and I

realized that Lactobacillus acidophilus was the only probiotic with

history (over 100 years). That said, I do not think anyone knows

with certainty what the interactions between intestinal flora

probiotics, and food are.

In spite of all the hype of recent years about how important

probiotics are, none of these researchers considered diet as being

important when using probiotics. I disagree. I feel that the use

of probiotics without considering diet is of utmost importance and,

therefore, do not have a lot of confidence in the hype.

The 3 bacteria used in ProGurt seem OK to me. I do not know if it

is better than a starter without L.casei.
