The egg whites will help it rise higher without adding points. When you leave the eggs out all together the cake won't rise as high...it still works though. I would guess that unless Sharon only uses a small portion of the soda pop she will have a very mushy cake. Two cups of zucchini and a whole can of soda will make a runny batter...I think. Kris is right on and I want to say thanks for the hint about watching the amount of soda I add. I need to make zucchini everything because my garden is working overtime producing that yummy green veg. Last night I sautéed some onions and zucchini and smothered with homemade pasta sauce and topped with a bit of parmesan cheese. I am seriously on a zucchini recipe hunt. Into my mixer bowl I places 2 cups shredded zucchini, 1tsp apple pie spice, 2 egg whites and about 1/3 can Hansen's sugar free soda (I used ginger ale) and mixed it up good. Then I stopped the mixer and added the cake mix and mixed it up good. It needed a bit more soda. I just added til the consistency looked right. Ended up using just over half the can of soda. The cake is fluffy and tastes really good. Next time I will add a bit more apple pie spice, maybe another 1/2 tsp. Serve with a bit of whip cream...mmmm baked in a 9x11 1/2 baking dish, 12 servings is 3 points per serving. You will have to figure out your points according to the cake mix you choose. All are not the same and only the chocolate has fiber..as I see it. The zucchini added 4 gram fiber too, not per serving but to the whole thing.
