No nut pizza

If any of you have children who can tolerate dairy (cow or goat),

but cannot tolerate nuts, this pizza is for you. :)

Ingredients:

Chicken pancakes batter (recipe below)

About 1/2 cup pizza sauce (homemade)

About 1/2 cup finely shredded cheese

Any toppings your child likes

Prepare two very large chicken pancakes.

(These are the crusts.)

Put both crusts on a jelly roll pan.

Put about 1/4 cup pizza sauce on each crust.

Cover with shredded cheese.

Bake at 350 for 8-10 minutes.

My boys LOVE these pizzas and they are actually really fast to

make if you keep the sauce and shredded cheese on hand. I

usually just boil lots of chicken at once and keep it to use when

needed.

These come out looking like a regular pizza. They travel well...

as long as you have a child that will eat cold pizza... mine will.

FLOURLESS CHICKEN PANCAKES

recipe by Jody

1 chicken breast precooked (season as desired while boiling)

3 eggs

Using a food processor, blend ingredients together until

completely smooth. Mixture will look just like thick pancake

batter.

Use 1/4 cup of the mixture and cook in hot greased skillet like a

pancake. Batter may need to be spread out a bit so that it is not

too thick.

These cook much faster than nut flour pancakes. Watch them

closely.

Makes 4-5 pancakes.
