Guest guest Posted January 10, 2005 Report Share Posted January 10, 2005 If any of you have children who can tolerate dairy (cow or goat), but cannot tolerate nuts, this pizza is for you. Ingredients: Chicken pancakes batter (recipe below) About 1/2 cup pizza sauce (homemade) About 1/2 cup finely shredded cheese Any toppings your child likes Prepare two very large chicken pancakes. (These are the crusts.) Put both crusts on a jelly roll pan. Put about 1/4 cup pizza sauce on each crust. Cover with shredded cheese. Bake at 350 for 8-10 minutes. My boys LOVE these pizzas and they are actually really fast to make if you keep the sauce and shredded cheese on hand. I usually just boil lots of chicken at once and keep it to use when needed. These come out looking like a regular pizza. They travel well... as long as you have a child that will eat cold pizza... mine will. Mixture will look just like thick pancake batter. Use 1/4 cup of the mixture and cook in hot greased skillet like a pancake. Batter may need to be spread out a bit so that it is not too thick.
