Removing all nuts will make things more of a challenge, but there are others who have done SCD nut free. There are chicken pancakes, chicken cupcakes, sneaky veggie pancakes which don't have nuts in them, but come out cake/bread-like. The probiotic you are using is not SCD legal. At some point you may want to reconsider and try using one of the legal ones. Many kids and adults with GI problems do not do well when supplemented with bifidus. The other foods you listed sound good. Are avocadoes a possibility? They are high in carbs and in good healthy fat. That will help take the caloric place of the nuts.
