Guest guest Posted September 25, 2003 Report Share Posted September 25, 2003 I went to the grocery store last night and bought the ingredients for the Crazy Pizza recipe that I posted to the list yesterday. I modified it a little based on the size of cans of stuff that I bought. The original recipe called for only 8 ounces of lean beef (or turkey), but I always brown the meat and THEN freeze it to save time later, and I freeze it in one pound units, I added a full pound. I also bought a small green pepper and a small onion. I weighed each portion prior to putting it in the food processor instead of actually measuring, because I planned to use it all anyway. The original recipe called for an 8x8 pan, but I put mine in a 9x13. The Pillsbury biscuits were only sold (at this store) in four-packs, so I decided to use two cans because I wasn't sure when or if I'd use them again and I didn't know how long they'd last. (And then I wonder why when I cook, some things don't taste right!) LOL Anyhow... this recipe turned out AWESOME! I am not really a fan of onions or green peppers, but I used the processor to get them really chopped up (I think it is big CHUNKS that I don't like). I did the same with the shredded cheese, I put them in the processor and shredded/blended them together. The recipe made eight very good-sized portions. I ate my piece with a salad on the side. I even brought a piece for lunch today (and I normally don't like to eat the same stuff the next day). I know we've discussed this before, but if the veggies are free, and in relatively small amounts, do I have to count them in the recipe totals? I mean, if it was a large quantity OVER the normal serving, then I suppose yes. So... I figured the points without the veggies or the tomato sauce. By taking each ingredient and figuring the total points divided by the number of servings (8) and then adding those totals, the points per serving are 5.87 or 5.9. If I add up the totals and then divide by the number of servings (8), the total is 5.96 or 6. Not too much of a difference, only a tenth of a point off. CRAZY PIZZA (modified) Serves: 8 Points: 5.9 Ingredients =========== 16 oz. lean beef (93% fat free) 6.4 oz. can sliced mushrooms 1/2 c. chopped green bell pepper (I used 56 grams) 1/2 c. chopped onion (I used 74 grams) 1 3/4 c. Hunts tomato sauce (15 oz. can) 3 packets Sugar Twin (optional) 1 t Italian seasoning 2 cans Pillsbury refrigerated buttermilk biscuits (two 7.5 oz. size) 1/2 c. reduced fat shredded cheddar cheese 1 c. reduced fat shredded mozzarella cheese Directions ========== Preheat oven to 350 degrees. Spray 9 " x 13 " baking dish with olive oil flavored cooking spray. Brown meat. Add veggies. Mix well. Stir in tomato sauce, sweetener, Italian seasoning. Cut each biscuit into 4 pieces, stir into meat/veggie mixture. Put in baking dish. Back 20 minutes then sprinkle cheese on top and bake until cheese melts - about 10 minutes.
