It actually is possible to make your own tortillas. They freeze fine.

You cried because this sucks. On the other hand, your husband was

nice, which counts for something. Perhaps start making a daily

list. Left side, stuff that sucks. Right side, stuff that doesn't.

Could show an interesting result after ten days.

I was only able to find corn tortillas that were okay for LID. The flour

tortillas all had something unacceptable.

I was only able to find corn tortillas that were okay for LID. The flour

tortillas all had something unacceptable.

Anne,

I cried all day the other day because I couldn't open a can of

Tuna....got myslef frustrated, and this happens frequently without

much reason or warning......I think it's just one of the many side

effects of being Hypo....or time for a nap.

Hang in there....only few more days to go!!

Well there's not much to the ingredients. I use whole wheat flour that

I grind myself from hard red winter wheat.

Here's the recipe (it came from the " Createive International Cookbook "

edited by Charlotte Turgeon.

Flour Tortillas

---------------

2 cups unsifted flour (I use fresh ground whole wheat flour)

1 teaspoon salt (non-iodized for LID of course)

1/4 cup lard (I think I used shortening)

1/2 cup water

Combine flour and salt in mixing bowl. Work lard into flour mixture

with your fingers until mixture resembles coarse cornmeal. Make a well

in center of flour mixture. Add water; stir to combine. Form into a

ball. If mixture is dry, add a little more water. Knead for 3 minutes

on a floured board. Divide into 6 balls. Cover; let rest for 20

minutes. Roll each ball on a floured pastry cloth to a 7-to-8 inch

circle (I made mine a little bigger). Trim, if necessary, using a

dinner plate as a guide (this worked great). Stack tortillas between

sheets of waxed paper until all are rolled. Bake on an ungreased,

moderately hot griddle untiil edges dry and brown flecks appear (approx.

2 minutes). turn, bake 1 minute more. Wrap tortillas in foil and keep

them warm until all are cooked.
