Re: new here--need crunchy cookies, anything

I just made Lucy's cinnamon cookies for the first time, and when

cooked long enough, they do crisp up. You can do a search on the

list for the recipe - it was posted about a month ago.

How about just making muffin tops? What I mean is bake the batter

like biscuits or cookies - or - you could cut the muffins in three

layers and gently toast them in a toaster over or oven.

It's funny you say that because I just tried that yesterday! I

crumbled them up and stuck them back in oven to " toast " . Thanks for

the reply!

Try these, they come out crunchy

---Pecan Cookies

(makes about 10 small cookies)

1 pear, cored and peeled

1 tsp gelatin, 3 Tbs boiling water

1/8 tsp baking soda

pinch of salt

pinch of nutmeg or cloves or cinnamon (optional)

1 1/2 c pecan flour ( I make my own using rotary cheese grater)

1. Cook pear in little water, until soft. Put in fine strainer and

mash with the

back of the spoon. You want to get rid of as much liquid as you

can. You

should end up with about 1/3 c of pear pulp

2. In a small bowl dissolve gelatin in boiling water. Put in the

freezer to

slightly gel for about 4-5 min. Bring out of the freezer and beat

like an egg

(till frothy)

3. Combine gelatin mixture, pear, b.soda, salt, and spices and mix

well.

Add pecan flour and mix till combined.

4. Shape the cookies into small balls and press and flatten with the

fork.

Line a cookie sheet with the parchment paper

5. Bake at 325F for about 45 min

They are just slightly sweet, you can add 1 tsp honey if you want,

but I like

them like this

Carrot Crisps! Our favorite! Also, popcorn cauliflower. Yum!!

Carrot Crisps:

peel carrots with peeler

use peeler to slice carrots

put slices in hot oil (we bought a cheap deep fryer for this and its

the best)

let cool on paper towel, sprinkle with salt

when cool, they are crisp

better than potato chips!

popcorn cauliflower:

chop cauliflower into small peices

add oil and salt to coat

spread out on cookie sheet

bake at 450 until nice and dark, turning once or twice (my son likes

them just turning black - about 30 min)

Our only problem is that we can't find a way to keep these for the

next day (they both will get soggy after a while). Actually, they're

eaten up quite quickly so its not a real emergency for us :)
