As for your chocolate experiments, I noticed that you are using crushed splenda tablets, and that it is a bit gritty. Have you tried the pourable splenda that comes in a box? It is very fine, even more so than sugar, and perhaps that will dissolve more easily? Keep me posted on your experiments - I am sure I will be one of your best customers! At the very least, I volunteer to be a taste tester! LOL !!! Your menus are looking good. I noticed that you slipped a few " gourmet " dishes in there - shrimp pernod, macadamia crusted chicken - sounding pretty tasty! <grin> With your schedule, I'm amazed that you are able to do all that you are doing!
