" 1. I baked all of our fruit. 2. I suppose that it can be microwaved, but I don't use my microwave much and prefer the taste of baked foods. 3. You can cook anything. 4. You do not have to cook very ripe bananas and ripe avocados. (Unripe bananas (or any other fruits) are not allowed on SCD.) I bought a lot of frozen fruit and baked it. It was very easy and eliminated having to peel stuff since the frozen mangos, peaches, etc. were already peeled. I just put a small amount of water in the bottom of a glass baking pan and then put the frozen fruit in the pan. I cooked it on 350 for 45+ minutes, untill it was soft. You can serve it as is, freeze it with sticks in it, puree it and eat it as " fruit sauce " or you can puree it and freeze it into popsicles. Frozen fruit works very well in the crock pot. I always add a little more water when I use the crock pot just so I do not scorch the fruit in case I forget about it for while. But the smell is wonderful, and it is hard to forget that it is cooking! I make fruit sauces/spreads/syrups in my bread machine (which has a jam setting). Follow the machine directions, and add more liquid (legal cider/homemade juices/water) if you want it to be more like a syrup for pancakes. We make pineapple syrup/sauce this way and everyone loves it--wonderful on all of the pancake recipes listed in pecanbread website. You can make it on the stove, as well, but you need to do more stirring. 1 cup crushed pineapple 1/8-1/4 cup pineapple juice (more if you want a syrup) 1-2 TBS Honey 2 TBS ghee or coconut oil (both melted). Set according to machine settings. If on the stove--cook for 5-10 mintues stirring until clear and thick. When the sauce cooks down, you may add cinnamon. Makes about 1 cup. Also good on SCD yogurt (either frozen or fresh), and we also use it as a dipping sauce for fruit (Dakota loves " dunks " and will eat most things if he can dunk it into something) and it is a really good marinade.
