Rambling frustrations and temporary burn-out!

Can someone really explain to me why my son has such a problem with

eggs? We retried it a few weeks ago, yolk first, then white. His

poops were pretty much okay, but his behaviors went so aggressive and

downright mean!!!! We HAD to stop the eggs again, and he is much

better.

What is the deal with eggs? They are such an integral part of this

diet, it seems, and I have read they are VERY healing and good for

us. It really bothers me that we can't use them, as it would open up

SO much more for us right now. Breakfast is like the worst thing,

because basically we have the same thing every morning, a muffin,

some yogurt with fruit in it, pomegranate juice diluted or fresh

carrot/apple juice, and that's it. We don't do pork, so bacon is

out, and my son never likes meat in the am.

I need more ideas. 8 months into it, but I am stagnant, and my

stamina in the kitchen is weak right now. I mean my mental stamina,

not physical. I am kind of, shall we say, experiencing BURN OUT.

And I can tell my kids are too!! I know variety is not all that

necessary, but when I use egg substitutes for something that calls

for more than one egg, it never turns out right!

Please help with my burn out. I know this diet is worth it all, but

I am frankly tired of it right now. I will not quit, just need a pep-

talk of practicality. As many of you know, I am not a good planner

or practical when it comes to food prep. I know all the basic tips,

but I don't follow them, that's why I need fast easy good stuff to do

daily.

Some of this is I am sure because my hubby is out of the country

right now in Iran, where he was born. He has been gone a week, and

has another week to go...Aagh, what a help he is. He always cooks on

the weekends to give me a break. Please pray for his safe return!

Does he still have the problems with eggs in baked goods? What about the

pancakes? My youngest can't eat eggs at ALL but in baked goods (and pancakes)

he's fine. This is common - something about baking changes the molecular

structure of the protein so many people who can't eat whole eggs can eat them in

baked goods.

Many mornings my kids eat bananas and cheese - or are you dairy free? I also

will let them eat the almond cookies for breakfast with fruit - since they're

healthy I think why not? It's not like eating a chocolate chip cookie for

breakfast! LOL

Same with the cakes and such - one of my favs is the apple spice bread recipe -

but I use in a small baking dish and it comes out like cake and bakes perfectly.

Using the breakfast sausage recipe in Lucy's Kitchen Shop cookbook you could

make the sausage with ground turkey instead. It's a very quick recipe - I'm

like you - I need quick and easy or I just can't motivate myself to do it. I

design children's boutique clothing and I spend all my spare time on the sewing

machine so I can't take time for elaborate meals. :) I know you said he wasn't

a meat eater in the am, but I thought it might be worth mentioning...

Good luck - I know I get burnout sometimes, but is doing so well after

being sooo sick that I just kick myself and move on cause nothing else but SCD

has helped him by itself.

My 3 year old loves the Eggless Almond flour bread Jody mentioned

here. It is very easy and quick to make too....you could make

several batches and freeze it. Thaw it out a little at a time. I

heat it up and my son devours it!
