Hi ,It IS about eating, but more than that, it is about counting your blessings, and thinking about what you are thankful for this year. Thanks Kate, I think I'll get that rubber ducky to take me all the way to US. LOL I just hope there aren't any sharks along the way that wants to take a bite out of my rubber duck. Challis will bring food with her. will make some pies. I will make apple and pumpkin pies, cranberry sauce and other stuff. Himself HAS to have hisstuffing, and I HAVE to have some "sinful potatoes", and then you add indessert, and and and.... :-) SINFUL POTATOESHowever many potatoes you need, peeled and slicedSome milkSome butter Some cream cheeseSome sour creamSome feta cheese (no, really!)Some fresh chivesSalt, pepper, etc, to taste Layer your potatoes in a covered baking dish of a size that it will beabout 2/3rds full (does that make sense? :-) ) Sprinkle with salt andpepper - sea salt and fresh-ground pepper are best). Pour in just enough milk to cover the bottom of the dish, and put yourdesired amount of butter on top of the potatoes. (Remember you'll be addingmore "wet" ingredients later, so err on the side of caution).

Cover, and put in the oven along with whatever meat you're cooking.Check for potato tenderness after about 45 minutes; they're done whenfork-tender. Remove from oven. Add sour cream, cream cheese, crumbled feta, and mash- taste as you go, and add more yummies as needed. When the texture is toyour liking, stir in the chives and adjust salt/pepper seasoning.
