We found a gf taco seasoning and began 'polluting' the taco mix with

blended/mashed black beans. When she adjusted to that I began putting

in grated/mashed veggies of all sorts-one at a time. Now the tacos at

our house have onion, garlic, turnips, rhutabagas, carrots etc; all

are grated/mashed and not readiliy identifiable. I've also had

success with the cauliflower 'potatoes' to which I've add other

cooked and mashed veggies also. The key for both of these has been to

find a flavoring that she likes and douse up the veggies with it.

I am am my wit's end with the veggeie situation. I can't sit by any

longer and watch this, I have to get the veggies in them somewhow.

The only problem with disguising vegies in food is that they get

cooked. Vegies must be fresh to really have the benefit, they also

should be picked when ready, most fruit would be picked weeks before the

phytonutrients come into the plant, some vegies are picked too soon

also. This is why it is essential now days to supplement, espeically the

kids who wont touch raw vegies. Of course cooked vegies are better then

no vegies, but the nutrient losses are huge.

Frozen is better then fresh as far as nutrients values because they

actually are pick fresh and frozen right away. The fresh stuff we get in

grocery store is 2 weeks old, alot of nutrient loss by then. Don't their

teeth get cold eating it that way? Burrrrrr.
