" I use any of the pancake recipes and make Scoody Doo waffles and use them for the sandwiches. Other kids react very positively to these as " bread " . So, you win on both accounts. I've never put the whole recipe in one loaf pan because I was afraid the center wouldn't get done, but it works really nicely in those mini loaf pans. Guest guest Posted November 26, 2004 Report Share Posted November 26, 2004 I like the mixed pancake/flatbread recipe from pecanbread.com I whip the egg whites separately and then fold them into the rest of the ingredients. I also decrease the honey quite a bit. then I bake it in a jelly roll pan and cut it into squares. I find it drier than other bread recipes and it looks like wheat bread.
