Almost fat free zucchini brownies

I played around with this today until I got it perfect, which means I've

eaten three of these (one from each batch). *BURP* Fortunately I had a low

point lunch (kangaroo burger, no I'm not kidding). These are VERY chocolatey

and make a pretty good sized brownie. I was thinking of topping it with

chocolate fat free frozen yogurt and some cool whip free for a fancy

schmancy dessert. At 24 they are still 2 points, but I thought 30 was a more

reasonable size.

Didn't someone want a way to get more veggies in? Well here you go!

LOL!

It was a muffin recipe. But then I decided that since I only have one six

muffin pan tin thingy, that I'd put it into jelly roll pan. Then I decided

to make it chocolatier and richer by adding a little more cocoa powder

(surprisingly low in calories), moister by adding water, and a little

sweeter so it changed from muffins to brownies.

Sorry about that!

sSure. I just didn't have enough muffin tins. They're very cake-like. We had

them tonight with ice cream on top of them (well ff frozen yogurt) and cool

whip free. They were awesome!

Sounds good. May I ask why we spray the muffin pan? Are we making muffins or

making these in a jelly roll pan or both. OOOO I am confused....sorry

Tory! I just made and tried your zucchini brownie recipe and it was delicious!

THAT'S the way I like to eat my veggies! Thanks for your trial and error and

then sharing the recipe! By the way, it never said to add the chocolate chips

in, I just wanted to make sure they were counted in the calculation??? Thanks

again. --

Oops! Yes, they were for sure added into the calculation. I put it into the

recipe builder on the WWers site and it adds in all ingredients. The first

time I sprinkled them over the top, but I liked them mixed directly in

better. There aren't a lot of them, but a few per brownie and it gives it a

nice little " oooh " when you get one. Joan reran it with Splenda in it and

that would make it 1 point per brownie if you want to do that. I only had

the packets and didn't want to rip open 24 packets so just used sugar, but I

may try it with Splenda in the future. If you use Splenda you could add

walnuts so it's 2 points. I'm allergic to walnuts so I hadn't used them.

They were a hit on the picket line today, and it was cool for me to have the

option of having a sweet treat myself without wondering what was in it.

There were none left after about 4 hours and I took probably 60.

Tory, I used mini chocolate chips so that they spread throughout better. I

learned that trick when making low-fat chocolate chip cookies. I sometimes put

them in the kids pancakes, too. Your recipe makes so many! But I got my neighbor

to come by and take about a third of them ( she on ww, too). A 2-pt brownie is

nice, but not when you eat all 30 of them!!! --

Good idea. I happened to have some chocolate chips that I never thought I'd

use so I put those in, but next time I'll definitely get the small ones.

I just had one for dessert with coffee flavored frozen yogurt and cool whip

free. Mmmm....
