These are VERY chocolatey and make a pretty good sized brownie. I was thinking of topping it with chocolate fat free frozen yogurt and some cool whip free for a fancy schmancy dessert. At 24 they are still 2 points, but I thought 30 was a more reasonable size. Didn't someone want a way to get more veggies in? Well here you go! Tory's Almost Fat Free Chocolate Zucchini Brownies POINTS per serving | 2 Servings | 30 Snacks | Ingredients 1 1/2 cup sugar 1 1/2 cup unsweetened applesauce 1 tbsp vanilla extract 3 1/2 cup zucchini 3 cup all-purpose flour 1 1/2 tsp baking powder 2 1/2 tsp baking soda 3/4 cup unsweetened cocoa 1 tbsp ground cinnamon 1/3 cup Nestle Semi-Sweet Chocolate Morsels 2/3 cup water Instructions Set oven at 350F. Spray muffin pan with pam. In medium bowl combine sugar, applesauce, water, and vanilla; blend well. Add zucchini, mix well. In large bowl stir flour, baking powder, soda and cocoa powder together. Add liquid ingredients and mix only till moistened. Pour into a jelly roll pan sprayed with nonstick cooking spray. Bake 20-25 minutes or until almost done, but still moist. But then I decided that since I only have one six muffin pan tin thingy, that I'd put it into jelly roll pan. Then I decided to make it chocolatier and richer by adding a little more cocoa powder (surprisingly low in calories), moister by adding water, and a little sweeter so it changed from muffins to brownies. We had them tonight with ice cream on top of them (well ff frozen yogurt) and cool whip free. Add zucchini, mix well. In large bowl stir flour, baking powder, soda and cocoa powder together. Add liquid ingredients and mix only till moistened. Pour into a jelly roll pan sprayed with nonstick cooking spray. Bake 20-25 minutes or until almost done, but still moist. Remove to rack. I put it into the recipe builder on the WWers site and it adds in all ingredients. The first time I sprinkled them over the top, but I liked them mixed directly in better. There aren't a lot of them, but a few per brownie and it gives it a nice little " oooh " when you get one. Joan reran it with Splenda in it and that would make it 1 point per brownie if you want to do that. I only had the packets and didn't want to rip open 24 packets so just used sugar, but I may try it with Splenda in the future. If you use Splenda you could add walnuts so it's 2 points. I'm allergic to walnuts so I hadn't used them. They were a hit on the picket line today, and it was cool for me to have the option of having a sweet treat myself without wondering what was in it. I learned that trick when making low-fat chocolate chip cookies. I sometimes put them in the kids pancakes, too. Your recipe makes so many! But I got my neighbor to come by and take about a third of them ( she on ww, too). A 2-pt brownie is nice, but not when you eat all 30 of them!!! -- Tory K wrote: > > Oops! I happened to have some chocolate chips that I never thought I'd use so I put those in, but next time I'll definitely get the small ones. I just had one for dessert with coffee flavored frozen yogurt and cool whip free.
