You can drip yogurt and room temperature and return it to the fridge.

Last year their was a post from a veteran with her tips,tricks and

essential equipment. I don't have the post anymore but we use her method

for dripping yogurt and making cream cheese.

To drip:

Buy some plain white men's cotton hankerchiefs. Line a colander with a

hankerchief and drip the yogurt through that. I drip my yogurt in 2 litre

batches. The yogurt closest to the hankerchief will be a lot thicker than

the that in the middle but when you scrape it all out and stir, it will mix

up to an even consistancy.

To make yogurt cream cheese:

Drip yogurt as above until very thick(I usually leave it overnight). Then

scrape out on to white cotton terry bar towels and squeeze out remaining

moisture to desired consistancy.

These methods have worked very well for us.
