Guest guest Posted November 9, 2004 Report Share Posted November 9, 2004 I haven't had the heart to test which nut makes vomit, so have just been avoiding them and would LOVE cookie recipes or how to's regarding how to bake with coconut flour or bean flour? Do you just grind up the coconut and legal cooked, dehydrated beans into a flour and substitute it for the nut flour? I am not a baker by nature, so does anyone know if any other adjustments need to be made? Guest guest Posted November 9, 2004 Report Share Posted November 9, 2004 That sounds right to me (as far as flour preparation,) but I have to advise you not to try it yet at this point. Coconut and especially beans are really really really hard to digest. Is she allergic to nuts? Do you know why she vomits? Nut butters in baked goods are much easier to digest and are not noticeable. The cashew butter muffins don't really taste like nuts at all, so if it's simply a flavor issue, perhaps that is an option. If you're going to try coconut or beans, I'd stick with the coconut and try the macaroon recipes at pecanbread first and *go very slowly.* That way, there'd be no experimenting and you won't have to waste any pricey coconut if she isn't able to tolerate it after all. For many of the unsweetened coconut recipes you won't need to grind up the coconut. Many places sell shredded unswetened coconut (so you shouldn't have to grind it yourself. There is one meringue and three macaroon recipes at http://pecanbread.com/recipes.html Is able to tolerate properly prepared beans yet? If yes, I can forward you a recipe for bean paste. The nut butters may work better. But I completely understand on not wanting to test that theory. It may be seem to think about for down the road.
