One of my all times FAVS is cheese danish!Cinnamon Cheese DanishPastry Portion:3 eggs, separated (reserve 1/2 yolk for the filling)1/4 teaspoon cream of tartar1/4 c sugar substitute (I use Splenda)1 teaspoon cinnamon3 Tablespoons Ricotta cheeseSeperate eggs, reserve 1/2 yolk for filling, whip whites with cream oftartar till very stiff. Mix the remaining yolks, cinnamon, ricottacheese and sweetener till smooth and fold into beaten whites. Portioninto 6 mounds on cookie sheet. Make indentation in top o each to holdfilling.Filling:4 oz. cream cheese1/2 yolk (reserved)1/4 c Splenda1/4 teaspoon vanillaMicro cream chese till soft and stir into pasty consistency (15 secondsor so).Add remaining ingredients and stir till smooth.Fill each Atkins roll on cookie sheet with filling.Bake 40 minutes at 300 degrees till golden brown.3.5 carbs per roll.It is best to make filling up first and then whip the whites andcomplete the roll part so the whites stay very stiff.Also as I stated in my original message, these are much better after acouple of days being stored in a plastic bag in the refrig with waxedpaper inbetween the rolls.
