Hamentashen success!!!

I made my first gluten free hamentashen today, and they are great!

(Sounding like Tony the Tiger in my head). I used my all-time

favorite recipe and just added xanthan gum. It worked. Yay!!! The

cookie part is slightly tougher than normal, but that could also be

because my dc were playing with the dough while I was rolling them

out. Here's the recipe, in case anyone's interested. These are more

of a pastry crust rather than a cookie, not sweet on the outside. The

original recipe is from a little old cookbook my mom gave me called

Simple Jewish Cookery.

Hamentashen

2 C GF flour mix (I used Bette Hagman's Featherlight Rice Flour Mix)

2 tsp. xanthan gum

1 C butter or margarine

1/2 lb. cream cheese

Sift flour and mix with xanthan gum. Cream butter and cheese together

until well blended. Gradually add flour a little at a time. Make a

ball of dough and put in refrigerator overnight or for several hours.

Roll out (not too thin), cut in 3-in. circles. Put about 1 T of

filling (see Fillings below) in the center of each circle. Fold up

sides to make triangles and pinch corners shut. Bake on greased or

sprayed cookie sheet in 350 degree oven until cookies are golden,

about 20 min. Do not let them get too brown or they will be tough.

Makes about 36.

Fillings: I like to use all-fruit jams in favorite flavors, nut,

poppyseed and prune fillings from the baking section of the store (not

sure if those are gf), and this year we used Nutella, which was soooo

good.

I didn’t know these were CREAM

CHEESE cookies. How yummy is that!!! I’ll make them. Maybe I’ll

take them to church Sunday—give the kids at least a taste of Purim this

year!

Just a warning: I have no idea how many calories and fat grams are in

each of these, and I don't want to know. But it's hard to stop at

just one. ;)
