Guest guest Posted March 4, 2006 Report Share Posted March 4, 2006 I’ve been making my own sausage with ground chicken (left over from making chicken nuggets). It’s soooooo easy. The Joy of cooking recipe calls for the following spices—I just mush in whichever of them I happen to have. I use it immediately or freeze it in patties. I’ve put it in omelets and spaghetti sauce. Yum. 1 ½ lbs gr. Chicken 2 tsp salt 2 tsp pepper 1 ½ tsp dried sage ½ tsp dried marjoram ¼ tsp dried savory 1/8 tsp ground ginger Pinch of ground cloves Pinch of ground red pepper Laurie lbilyeu@...
