Ok, recipe for faux-tato salad: (I don't have exact measurements, as this was my Mom's recipe and she told me " add this, add that to taste " LOL) I took 2 heads of cauliflower and cut/broke them into flowerets (some larger than others, not too tiny). I put them in a pot with a little water and cooked until crisp-tender (not mushy). Drain. Then, I chopped some green pepper, onion, radish, and about 3 hard boiled eggs and added that to the cauliflower. DRESSING: Mix together mayonnaise (Mom always used Miracle Whip, which is higher in carbs), a squeeze or two of mustard (not too much), about a tsp and a half of white vinegar. Splenda, salt, pepper to taste) Mix it up in a small bowl, tasting as you go until it is tangy-sweet and tasty!!! Pour dressing onto vegetables and mix together...Chill in fridge and enjoy!
