Hi, Kari!

Ok, recipe for faux-tato salad: (I don't have exact

measurements, as this was my Mom's recipe and she told

me " add this, add that to taste " LOL)

I took 2 heads of cauliflower and cut/broke them into

flowerets (some larger than others, not too tiny). I

put them in a pot with a little water and cooked until

crisp-tender (not mushy). Drain.

Then, I chopped some green pepper, onion, radish, and

about 3 hard boiled eggs and added that to the

cauliflower.

DRESSING: Mix together mayonnaise (Mom always used

Miracle Whip, which is higher in carbs), a squeeze or

two of mustard (not too much), about a tsp and a half

of white vinegar. Splenda, salt, pepper to taste)

Mix it up in a small bowl, tasting as you go until it

is tangy-sweet and tasty!!!

Pour dressing onto vegetables and mix together...Chill

in fridge and enjoy!

I'm sorry this recipe isn't specific, but you can take

your favorite potato salad recipe and just replace the

potatoes with the cauliflower!
