Because I bought a box Mochiko sweet rice flour and she said that is what they use. The box is from KODA FARMS South Dos Palos,CA. They have a web site. I did not care so much for them too soft in my fingers. But I did try. I think it was seamaiden who told us about dried bananas well I went back to that store was still busy but not like opening day. They also had dried bananas Like flat like pancakes approx 5 " around also they had them rolled like a cigar now I asked what do you do with the flat one but they could not tell me.
