Hi

Over a month ago I ordered some Xanthum Gum when I was ordering some Stevia, and Darrell Lea Choc Chips. I had read that it was a good low carb product to use as a thickener---I finally got to try it tonight.

Tonight I fixed porkchops, took the drippings and added some water and whipping cream to make gravy. I took a cup of water and added two teaspoons of the xanthum gum---------after stirring for about a half a minute I had a "concoction" about the consistency of thick pudding------I was thinking it would work like cornstarch---NOT!! Any tips or pointers from the experienced folks would be much appreciated.
