She is so interesting and well informed! Not only does she have various impressive degrees and experience, but she and her daughter are both Celiac and dairy- free. It was wonderful to talk to someone who really knows the ins and outs of CD, but who also has all the training and practical experience to put together the menus and lunchbox items with a real eye for the nutritional details. I found myself explaining things to her. Was it hard to get an appointment with ?
