Guest guest
Nah I don't think your a whiner.. I totally get where you are coming from... I can do dairy, I slightly react to it but can't do tomatoes, lettuce, pork tuna, soy, peanuts, tree nuts, beans... and so forth, its a pain in the butt on good days and depressing on bad days... and we all have them... both good and bad. It sounds like you've found some options and I bet next time your in the grocery store you'll find more (you seem pretty creative). But its certainly not easy. Guest guest
OOOOH, Angie…sympathizing. I’m missing the dairy also. And my health hasn’t improved enough yet to let me know how worth it this is!!! What can we do about pizza? Ds can’t have soy, so soy mozzarella is out. Surely someone here enjoys some kind of cheese-less pizza? Laurie lbilyeu@... Guest guest
Don't despair. You can get GFCF chocolate. I've seen GFCF chocolate chips at the store. I've also heard of this site http://amandasown.com/ Haven't tried them (and am not affiliated with them), but she posted about the products on the ROCK list so I believe they are GF. (The site doesn't emphasize GF, you could email the owner). Sue in Denver > > > > OOOOH, Angie.sympathizing. I'm missing the dairy also. Guest guest
Oh, yeah, that’s the next one! Trudy very helpfully offered this link the other day for gfcf candy http://www.gfcfdiet.com/Chocolatecandy.htm Cocoa powder is gfcf, of course, for baking. So are chocolate chips, some. But yeah, it’s a loss I’m hating also. Laurie lbilyeu@... I haven't had the > nerve to look at ingredients on this product yet..... =================== chocolate becomes a problem when you can't touch dairy as most of the chocolates are made on dairy lines so even if milk isn't an ingredient you get contamination. I buy all my chocolate from kosher stores. Alprose is a Swiss chocolate that is very good and is parev. if you can get to Crown Heights in NYC the big kosher stores there sell it really cheaply. I have a friend who buys it for me. Shez

Here's a list of kosher symbols http://www.kosherquest.org/html/Reliable_Kosher_Symbols.htm information on hechshers http://en.wikipedia.org/wiki/Hechsher There is a yahoogroup for GFCF recipes. Most of the people on the list are there because they have children on the autistic spectrum but they welcome everyone. I have found some great recipes there. Guest guest
I must admit, it would be a REAL problem around here if any of us were unable to eat dairy. I don't envy you. Gluten you can substitute with reasonable replacements. It's hard to replace dairy. Guest guest
Dairy's not as hard to replace as you might think as long as you can have soy. If you're also off soy then it's a problem. That's what I'm facing right now. My doc wants me to try SCD and soy's not allowed on SCD. Because gluten free casein free (GFCF) is becoming a popular diet in the autism world, there are lots of products being made that are free of both gluten and milk. Both my 8 year old and I are off gluten, dairy and citrus. I'm also off a ton of other foods. It really isn't as bad as you might think once you get past the emotional side of it. I think that's got to be the hardest. Trudy in NH > > > > > > Nice of you to ask! I thought it was a good question, so I > asked > him. Guest guest
I sometimes add some nutritional yeast to mac & cheese. It is nice but my daughter likes it just as much without it. Tofutti American slices are amazing things. I know that's what 's Gourmet uses nutritional yeast on their Tings to flavor them. That's where I got the idea. While they don't taste like cheetos cheese, they do still taste good. Tings are really popular in my house. The biggest problem with them is that I can eat a whole bag in a single sitting. :-) Trudy in NH > > > > > > > > Nice of you to ask! I thought it was a good question, so I > > asked > > him. Guest guest
Thanks Trudy, We can’t do soy either. If one tests as yeast sensitive, does that include nutritional yeast or is it a different animal? I mean plant. Laurie lbilyeu@... Guest guest
I think you need to find out which yeast you react to. There are different ones. From what I understand, brewer's yeast is grown in barley so any celiac would have a problem with that one. I'm not sure how nutritional yeast fits in. Sorry I wasn't more helpful on that one. I've been considering getting the Uncheese Cookbook. Have you looked at that one? If yes, are there good cheese recipes in it that don't use soy? I'm working on getting up the nerve to cut out soy. Or do you mean that you have a candida problem? Trudy in NH > > > > > > > > > > Nice of you to ask! I thought it was a good question, so I > > > asked > > > him. Guest guest
Uncheese is the very one I’m looking at—got it from the library. Lots of raw cashews and nutritional yeast. Lot’s of tofu also, but not for everything. Actually, is ds who is sensitive to yeast according to the Enterolab testing. I’ll write them as well to ask for specifics which is what I should have done in the first place! (duh, Laurie) Laurie lbilyeu@... Guest guest
I have two books that use unconventional things like nutritional yeast and nuts etc. to make vegan cheese. (Uncheese Book and another one I can't think of) When I was vegan I liked these homemade cheeses way better than the processed stuff. If you can have tofu, look in the files for two recipes using nutritional yeast- southern fried tofu and a baked recipe. You can try them and see if you like the flavor. Myself I LOVE nutritional yeast. It has a nice " cheesey " flavor. Good on popcorn with melted margarine and soy sauce... But, maybe it is an acquired taste. My DH loves the tofu recipes with nutritional yeast and he is not vegetarian. > > Have y'all tried to make casein-free cheese with nutritional yeast?
