I had the cauliflower mashed potatoes today for the first time, and although I

was skeptical, I'm now a believer! They were awesome. Except for the slight

difference in texture (my husband made them a little soupy), I would have

thought they were potatoes. I was worried about Thanksgiving dinner, but I

would be more than happy to have this instead of mashed potatoes.
