Guest guest Posted January 12, 2009 Report Share Posted January 12, 2009 This is my favorite cheesecake recipe.Take care,Kim H.husband, , CD 1999, SCD 2002New York Style CheesecakeCrust:1 1/2 cup Almond flour6 tablespoons butter3 tablespoons honeyMix all ingredients together well. Press into a 12 inch springform pan.Bake 350 degrees for 12 minutes.Cheesecake filling;2 1/2 pounds or 5 cups of cream fresh yoghurt (I use 5 cups well dripped half and half yogurt) 1 cup honey1 teaspoon grated lemon zest2 teaspoons Vanilla extract2 teaspoons fresh lemon juice1/2 teaspoon salt6 large eggs2 large egg yolksInstructions: Increase oven temp to 500 degrees.In stand mixer fitted with paddle attachment, beat cream fresh at low speed.Scrape down sides add salt and honey, scrape down sides again.Add lemon juice and vanilla, scrape down sides again.Add yolks and beat at low speed until thoroughly combined.Scrape bowl between additions (add 2 whole eggs at a time untilthoroughly combined).Brush sides of springform pan with butter.Pour filling into cooled crust and bake 10 minutes without opening ovendoor at 500 degrees.Reduce oven temperature to 200 degrees and continue to bake until instant readthermometer inserted into center of cheesecake registers about 150 degrees(about 1 1/2 hours).Transfer cake to wire rack and cool 5 minutes; run a paring knife betweencake and side of springform pan. She has eaten aged cheddar cheese, havarti, and now we are wondering what other cheeses would be a good addtition to her diet. She would like to try swiss... we have wondered about the aging process or what to look for on labels.
