Kris, I love that soup....haven't made it in a while.....My son is beginning

WW with me and I know he would like it......I'm re adding it to my

repertoire ;)

If you like spicy you will like this one. I think it has been posted before

but it is really good so I'll post it again ;o)

It calls for a full package of Taco seasoning but you really only need about

half. I made it with the whole package and it came out way to salty for me

and quite hot. The tomatoes I bought had jalapeño's and green chilies so

that might have been part of it. The second time I made it with half a pack

and it was just right so I would start with that and then gradually add more

if you like.

Go to the store and get all of this:

1 lg onion, chopped

1 pkg, taco seasoning mix

2 cups whole kernel corn

1 can chicken or vegetable broth

1 can black beans

1 can white beans

1 can fat-free refried beans

1 can diced tomatoes, (Mexican flavor)

1 can diced tomatoes, (any flavor)

Here's how to put it together:

1 - Sweat the onions (this means chopping them up and tossing them in a

nonstick pan sprayed with vegetable spray. Just keep tossing them around in

the pan until then start to soften.)

2 - Start opening cans! take out a BIG POT and begin by putting the 2 cans

of tomatoes in with the refried beans... stir it up until it is smooth.

3 - Add all the other cans and the onions. (Do not drain the beans, do drain

the corn if you are using cans of corn - frozen corn is wonderfully here.)

Stir it up. Add the taco mix.

4 - Bring the soup up to JUST a boil (do not boil for more than a moment.)

Cover and simmer 1 hour. (You can do the simmering in a crock pot for a few

hours, that makes primo soup.)

Hey, someone posted a low points soup link the other day....and I tried the

Spicy Carrot Soup recipe....I modified it by adding some jalapeños (I like

spicy)...then after blending I added a dollop of fat free sour cream to my

cup ....it was absolutely delicious.

serving please.

I'm not sure the number of servings but it's AT LEAST 8 or 10. It makes a

really BIG pot of soup. Since I'm the only one that eats it at my house I

freeze most of it. Serving size is 1 cup and the points are 1 or 2. I assume

that's because some people count the extra fiber? The recipe came from a gal

at my meeting and she said it was one or two points depending on how you

figure it. I haven't figured the points on WW website because they don't

allow you to just count things by the can, it has to be cups or ounces.

Since I don't have all the ingredients on hand right now I have no idea the

servings or weight per can. I have been counting one cup as 1 point and two

as two points. Once I get all the ingredients again I will figure it out for

sure and let everyone know.
