MEDITERRANEAN SALAD (Good for all Phases) 2 cups mixed greens (I used romaine and green leaf, but use whatever you like) Diced cucumber (one kirby, or 1/2 large) Halved grape tomatoes (about 5) 1 oz. crumbled reduced-fat feta cheese 2 Tbsp. Hoummus (I like the Cedars brand of Lemon Hoummos, or Whole Foods roasted red pepper variety) Green and black olives Oregano Sugar Free Olive oil-based Vinaigrette Arrange the greens, tomatoes and cucumber on a plate, top with olives and feta, place a scoop of the hoummus in the center, sprinkle with oregano, and drizzle the whole thing with the vinaigrette (you don't need a lot). Enjoy! This kept me full and kept my cravings at bay all afternoon. If you're on phases 2 or 3, warm up a whole wheat pita and use it to scoop up your salad -- and you'll never believe you're dieting.
