Oh my gosh! This all looks so

good!

The soup looks great – but now I want

to know what the bread is beside it. That looks great too.

I would love to know more about all of

these. Are these recipes from the files here or are they something

else? What kind of crust did you use for the cheesecake?

The crusts on my breads are usually much

darker. What do you use for the machine settings? Questions,

questions, questions!

The bread beside it is actually a hot dog roll from Sam's Bakery in Tampa, Fla (they do deliver-- their website is www.samisbakery.com) It's Millet and Flax no preservatives. They list gluten free items on their site and ... but please note they are processed in a Non Gluten Free facility and may contain traces of Gluten, Wheat, or Yeast. This is stated on the package. My brother, who is very sensitive to gluten can eat their gf products with no problem, so can my dad who is less sensative than both of us. I've had no reaction to their products so far. I love their pizza crusts, burger buns, hot dog buns, and bread. (These are grainy not smooth)

For the cheese cake I used finely crushed Pamela's Lemon Shortbread cookies and melted butter. (The recipe should be in the files, I posted it a while back)

I have a Sunbeam (cheap) bread machine, I used the Basic bread selection setting and Medium crust color setting This was a 2lb. loaf (I never make smaller).

I was hoping that was a homemade roll –

but it’s nice to know about this option.

My machine is programmable, but even on

the light setting and with reduced cook time the crusts are dark. I wonder if

that has more to do with the recipe or the flax I always add? I have been

blaming it all on the machine. Sounds like another science experiment!

That cheese cake was one of the best ones I've made...lots of rave reviews!

For the bread--

I always use the same setting on mine, even though it has a bunch of options. I've added flax too and it didn't change the crust color... maybe this will help rule out one of the variables. My crust settings are L-Light P- Medium H- Dark

My selection settings are Basic, French, Sweet, ExpressBake58min. (tried once but didn't like results)

expressbake80min (never tried) Whole Wheat (won't ever try), Dough/Pasta and Bake (never used)

My timer sets itself when you pick one of the above settings but also has up and down arrows so you can override the timer setting. (It's a Sunbeam Oster, Model 5836)

I use the Gluten-Free Pantry Favorite Sandwich Bread Mix. I sometimes make it plain, sometimes I add flax meal, I've also made it with Cali-Fine Seasonings for extra flavor. Or I make what we call Scarborour Fair Bread and add the seasonings- Parsley, Sage, Rosemary, and Thyme and also Dill Weed, and Dried Onion Flakes (that one tends to be a little heavier though but lots of flavor. I've also made one with a little diced pepperoni and some shredded cheddar-- it's good!! Now I've just talked myself into making some this evening when I get back from my son's concert!!

They all sound good! You are way

ahead of me on adding ingredients. I am still tampering with a little

more vinegar or honey or soy lecithin or whey powder…. this list goes on ….

trying to get the perfect balance of looks, texture and taste.

I think I’ll have to make something

now too. Nothing like fresh hot bread to bring all the kids running down!

Just a word of caution. It has been years since my daughter tried a

cookie made by Sami's Bakery in Tampa, but it was also the last time

we will ever eat anything from Sami's. She became so ill (vomiting)

after eating 1/4 of a cookie. It was the only time I have ever

called a company because of my concern for their ingredients. I

spoke to one of the owners who told me that they (at that time)used

the same mixers to mix their wheat-containing prouducts and their

non-wheat containing products. He would not confirm that they

washed their mixers between batches. I spoke to several other

Celiacs who had similar experiences in Tampa at a support group

meeting. Please proceed with caution.

Does anybody know if you can substitute the half and half for heavy whipping cream? I want to try the recipe now but that is all I have :( Please let me know... I don't really cook much so... HI Girami,

When I used to make a seafood soup quite often, I used whatever milks I had in the fridge (not flavored coffee creamer though)...If you use heavy whipping cream, I'd use part whipping cream and part milk and more broth. You can even mix sour cream into it for the last few min. I'm an experimenter after I make a recipe by the directions, I try variations with whatever I have on hand. Most times it turns out fine and often better than the original recipe. So I'd say go for it. If you don't have milk, use less of the heavy whipping cream, just enough to make it creamy and if it's still too thick, add more broth (I didn't use canned, I used cubes dissolved in water).
