Zucchini Quiche 2 zucchini (or 1 big one) 2-3 cloves garlic diced onion - however much you like 12 eggs 1 c. cottage cheese 1/2 c. Parmesan cheese Preheat oven to 400. In skillet, saute zucchini, garlic, and onion in olive or canola oil. Mix eggs with cheeses, add vegetable mixture. Spray baking dish generously with olive oil Pam, bake 30 minutes until nice & golden brown on top and knife comes out clean. Raw eggs can be frozen as long as they are combined (yolk is mixed with the whites). Put all ingredients in a freezer zip bag and remove as much air as possible. Label and lay flat in the freezer. When you're ready to cook, thaw completely, then follow the baking instructions. You can also freeze individual portions after baking to make weekday breakfasts easier. No size pan is listed, but with 12 eggs and 1 cup of cottage cheese, I don't think it would fit a pie pan. I'd try a 9x13. I'm keeping a copy of the recipe myself. It sounds good! Donna Sorry!
