I've got a bunch of dried fruit, and I was really jonesing for some granola yesterday, but all the recipes I've seen are REALLY HIGH in points. Guest guest Posted December 3, 2003 Report Share Posted December 3, 2003 I don't know if it's lower points than store bought but this is a really good recipe from Country Living Magazine. It works out to being 3 points for a 1/3 of a cup. You might be able to cut the points by leaving the raisins out and cutting back on the almonds. I have only made it once though because I couldn't keep from eating it all day long ) 4 C Old Fashioned Oats 1 1/2 C Sliced Almonds 1/2 C Light Brown Sugar 1/2 tsp Salt 1/2 tsp Ground Cinnamon 1/4 C Cooking Oil 1/4 C Honey 1 tsp Vanilla 1 1/2 C Raisins or Dried Cranberries Preheat oven to 300 F. In a bowl mix oats, almonds, brown sugar, salt, and cinnamon. In a saucepan warm the oil and honey. Whisk or stir in vanilla. Carefully pour liquid over oat mixture and stir gently with wooden spoon or mix by hand. Spread mixture on a jelly roll pan and bake for 40 minutes, stirring every 10 minutes. Cool completely and add raisins or cranberries. Store in airtight container. GRANOLA 3/4 cup brown sugar 1/4 cup water 2 teaspoons pure vanilla extract 1/2 teaspoon salt 4 cups old fashioned rolled oats 1/2 cup chopped walnuts 1/2 cup slivered almonds Preheat oven to 275 degrees F. Combine brown sugar and water in a glass 8-cup measuring cup or bowl. Place in microwave on high for 2 1/2 minutes and cook until sugar is completely dissolved. Remove from microwave and add vanilla extract and salt. Add oatmeal and nuts and stir until thoroughly mixed. Spread the granola onto a cookie sheet (if you have a cookie sheet baking stone, all the better) and bake for 1 hour until golden and crunchy.
