I've made homemade hummus without the tahini and it tastes fine. For me the necessary flavors are the garlic, cumin and lemon juice. (Be careful with the garlic and lemon juice -- they can get overpowering pretty quickly!) Also, I used olive oil, but I don't know how necessary it is. Mostly for the consistency, I think.
