Guest guest Posted February 13, 2006 Report Share Posted February 13, 2006 Oven-Baked Sweet Potato Fries This is a sweeter, healthier alternative to greasy fries. Sprinkle a bit of salt or cayenne pepper over them while still hot. 1 1/2 lbs sweet potatoes, scrubbed and peeled 2 Tbs soy sauce 1 tsp vegetable oil 2 clove garlic, peeled and minced 1 Tbs firmly packed brown sugar 1 Preheat oven to 400°F. 2 Cut sweet potatoes into ¼-inch strips; set aside. 3 Whisk together soy sauce, oil, garlic and brown sugar. Toss sweet potatoes in a bowl with soy mixture. 4 Lightly coat a rimmed baking sheet with vegetable cooking spray; place sweet potatoes on sheet in a single layer and cook for 20 minutes, gently stirring every ten minutes, or until crispy and golden brown. Serve hot. I made this last night and we ate them ALL- very tasty! But even fries made plain were good (with olive oil, salt and pepper), baked in the same way or in a 450 degree oven.
