We make nestle tollhouse cookies all the time using bette hagman's

gluten free gourmet mix (3 flour mix). They are great! we usually

freeze half the dough to use later. There are lots of chocolate chip

cookie recipes in the files, also..

Thanks...can you tell me the 3 flours she uses? I have some rice flour...?

I'm just beginning to bake/cook from the recipe files...

I want to say those Mock Chicken Nuggets are great!!! Even the teenagers loved them! It was pretty gross rolling the ground chicken balls though, I must admit...such a horrible texture, especially with the egg mixed in! Yuck! But they were very yummy!!! Thanks to whoever submitted that recipe!

I've done exactly the same thing!!!  One of my failed experiments resulted in a lot of GF chocolate chip cookie recipes being reposted.  We've tried several from this site and the best ones so far (in our opinion) is the recipe with pudding in it (I think posted by Bridgett?).  They are very good, but still not quite like a Tollhouse.  I haven't given up on that yet though and will let you know if I find any useful tricks (we are due for another experiement :) )

By the way, we made the peanut butter cookies adapted from a Dean (and posted by Kim?) the other day and no one could tell if they were GF or not.  And the recipe for Gooey Butter Cookies is absolutely awesome.  I have nonceliac coworkers asking me when I'm going to make those again?!?!?

I have had real good luck with the Gourmet magazine recipe...from the November issue. My no gf guys actually requested them again after the first batch was gone! Grr, i just lost my post. hrmph.

GF mis is, for example

6 cups white rice flour

2 cups potato starch flour (NOT potato flour)

1 cup tapioca starch flour (tapioca flour is always starch)

The recipe can be made smaller or larger as you like. You can order it

from Ener-g foods pre-mixed or mix your own. We like it for easy things

with lots of fat, sugar, or pureed fruit such as banana bread, pumpkin

bars, muffins, etc.

I make these often and share with non-gf friends. I

often omit the xanthan gum because my family likes them flatter.

Chocolate Chip Cookies

Ingredients

2 cups Gluten Free Blend

(GFB=6 parts rice flour: 2 parts potato starch: 1 part tapioca

flour)

¼ cup soy flour

1 tsp. Salt

1 tsp. xanthan gum

1 tsp. Baking soda

½ cup butter

½ cup shortening

¾ cup granulated sugar

¾ cup packed brown sugar

1 tsp. Vanilla extract

2 eggs

2 cups chocolate chips

1/2 cup chopped walnuts (optional)

Preheat oven to 375. Place butter on counter to

soften. In

medium mixing bowl, combine gluten free blend flour, soy flour, salt,

xanthan gum, and

baking soda. Stir with whisk. In large mixing bowl, combine butter,

shortening,

granulated sugar, packed brown sugar, and vanilla extract. Mix on

medium speed

until creamy. Add eggs, one at a time, mixing after each addition. Turn

mixer

to low. Add flour mixture, ¼ cup at a time. Turn mixer off. Scrape

bottom and

sides of bowl with rubber spatula. Turn mixer on low. Add chocolate

chips and

continue to mix on low speed until combined. Drop by rounded

tablespoonfuls (or

use mini muffin scoop) onto ungreased cookie sheets. After two trays

are full, add chopped

walnuts to remaining mixture, if desired. Continue process of placing

on cookie

sheets. Bake 9-11 minutes until golden brown. Cool 2 minutes on cookie

sheet,

then move to wire rack to finish cooling.

Note: Use approximately 2 cups of mixture to make

pizza pan

size cookie.

This recipe was posted by a member of the St. Louis Alerts group,

another Yahoo celiac grou. I tried these, substituting the Bette

Hagaman flour blend for the potato starch, and added extra pecans.

Pretty good! One note - I'm not sure of the proper amount of

Xanthan Gum to use - could not tell if it read 1/2 tablespoon or 1-2

tablespoons. Right now I don't recall which I used. The person who

originally posted it got the recipe from Nestle.

WHEAT FREE TOLL HOUSE COOKIES (Gluten Free)

(Makes 50 two-inch cookies)

1 cup plus 2-Tbsp. potato starch

½-tsp. baking soda

½-tsp. salt

10-Tbsp. butter, softened

6-Tbsp. sugar

6-Tbsp. firmly-packed dark brown sugar

1-2 Tbsp. of Xanthum gum

½-tsp. vanilla extract

1 egg

6-oz pkg. (1 c) semi-sweet chocolate morsels

½-cup chopped nuts

PREHEAT oven to 375 degree.

COMBINE potato starch, baking soda and salt in small bowl; set

aside. In large bowl, combine butter, sugar, dark brown sugar and

vanilla extract and xanthum gum; beat until creamy. Beat in egg.

Gradually add potato starch mixture. Stir in Nestlé Toll House semi-

sweet chocolate morsels and nuts.

Drop by rounded measuring teaspoonfuls onto ungreased cookie sheets.

BAKE at 375 degrees for 8 to 10 minutes.

Regarding chocolate chips cookies and the like.... The recipes from the

November Gourmet

were by a lady named lise . She offers courses at my local community

school

and I've taken a couple of them. Her GF mix and recipes are GREAT! Made the

sour cream

coffee cake over the holidays and everyone (celiac and non-celiac) really loved

it. Her

website is www.foodphilosopher.com. She strongly recommends a particular brand

of rice

flour, and I have found that it works really well. Not gritty at all. Anyway,

hope this helps.

I understand your frustration! I have had much success with Sylvan

Border Farm's general purpose flour. I substitute it all the time for

recipes (with xanthum gum) and have had wonderful results, including

the Tollhouse recipe. I've also used it for many recipes in my pre-

celiac Betty Crocker cookbook--it's fantastic.

So glad you liked the Gooey Butter Cookies. I have also made them with

Chocolate Cake Mix and they are good too. Also you can use the yellow cake

mix and put lemon extract or lemon zest in the batter. They are my

husbands favorite cookie.

I'm so glad you liked the peanut butter cookies!! I love them.

Went to Sams and bought a huge thing of peanut butter to always keep

on hand..kids like them with GF Chocolate chips in them!! YUM

I took a leap of faith when making them and doubled the recipe. Good

thing!!! I almost didn't get any :)
