I have that cookbook, too! I haven't pulled it out in a while, thanks

for reminding me. Also, now I have to look up the nan recipe. My kids

are all asking for " dinner breads, " a pre-diagnosis staple in our

household. (We loved all kinds of bread. No kidding, huh? Lol)

good but was missing something. can't wait to try your recipe

I'm not sure if this is what they meant, but if you use Bette Hagman

bread recipes (I love her french bread recipe from more from the gluten

free gourmet) in muffin tins rather than bread tins, you can make

really tasty rolls. Actually any bread recipe you like would work- you

just put your yeasty dough in muffin tins or in blobs on a baking sheet

and have nice yeasty rolls. They don't last long enough around our

house for me to make them.. too lazy!

Somebody asked me about that naan recipe (I posted it ages ago) 'cause

the flours are calculated by weight. When I made it last night it was

moister than I remembered, still pretty good but I feel like I haven't

quite perfected it. I like the flavor though- it is a lot like the

above mentioned french bread in flavor, a white rice and tapioca blend.

That chicken sounds good Kathi! I just got

home late from a meeting, hungry. DS had a very satisfactory dinner out at

Boston Market and I thought I only needed to feed myself. So I threw leftover

refried beans and cheese into leftover tortillas for a bean/cheese quesadilla.

I have mango salsa from Whole Foods that is so yummy on top. But DS tasted some

and is suddenly starving! I’ll go make more, I guess.

Easy quickie meal though.

hehe You have me laughing!! That happens around here lots! I make what I think is enough for me, or Mark and me...kids won't like that! HA!! Famous last words! Like tonight when I made roasted brussel sprouts. Ok. So I put them on to cook 10 minutes before dinner was ready...........Mark won't touch them. Kids said they were full...HA!! So I put the tray from the toaster oven on the table and all the sudden there are ARMS reaching across me to get one on a fork!! You never can tell..... Glad you had a nice dinner though. Isn't it great when you can do something like that?? It's good AND gf AND good (relatively) for you?? I was at WF today. I was actually pretty disappointed. Their fresh GF stuff was like NOTHING!! I called this bakery

Oh, fresh baked stuff—give us

detailed descriptions. My WF only has frozen bakery stuff except ener-g of

course.

My quesadillas are very healthy. I use

fat-free beans, reduced fat cheese. Maybe 4 points each for Weight Watchers

flexers, 2 for Core.

Some of the WF have " gluten free bakehouses " they call them. They

have so much good stuff sometimes and then other times not so much.

They have awesome coffee cake that I get when I can. YUMMY!!

I’ve heard that Rhiannon. I think we’ll

be getting fresh bakehouse here sometime (did I read that somewhere?). We do

have the bakehouse goods frozen, and so far I’ve liked what I’ve

tried. I’m not likely to buy a coffeecake, but I’m glad to have an

occasional slice of bread.

And Kathi, tell me about roasted brussel

sprouts. That’s one vegetable I’ve never been able to eat, but keep

thinking a recipe will come along that will change my mind.

Again!! Too funny!! The Bake house goods are the fresh baked things I was referring to. They used to be on a room temperature shelf. Now they are in the refrigerated rack with the prepackaged meals. The tomato garlic one IS good, although for $6 I really expected more. I keep it in the freezer and pull out a piece when I want some. I was hoping to find a "regular" flavor. But the coffecake sounds yummers!! The Roasted Brussel sprouts are thanks to Ina Garten...The Barefoot Contessa. Take fresh brussel sprouts, clean them up. Put them on a baking sheet (I use foil lined) sprinkle with salt (I use Kosher) and pepper (course ground) and sprinkled with Olive oil and shake the pan to coat well. Let 'er rip at about 350 until they are brown and carmelized

on the outside. They are soft and cooked on the inside. Yumm yumm yumm. The good thing is you can buy a 4-5 of 'em fresh and try it. Not like you'd waste a whole package!! Oh, Ina Garten...I like her. She was making a chinese chicken salad

today with peanut butter in the dressing. Although weird, it still

looked yummy. BUT, I still don't even think she could get me to eat

brussel sprouts...or busless ports as I called them as a kid. I

think they are just about the grossest vegetable there is and my mom

and dad loved them. So, I would have to shove them in my napkin and

flush them down the toilet so they wouldn't know. We still usually

got caught though. They were onto all of our tricks. As my parents

used to say, " you can't hid your green vegetables in a glass of

milk " . Anyway, I just thought I'd give you a little chuckle. Maybe

someone will actually love the sprouts, even thought they won't be

entering my shopping cart.

Thank you for the idea on using the muffin tins! I'm going to try

the french bread this weekend as a special treat (I'm the one who

eats too much bread! Lol!) I hadn't made the bread before, even

after hearing how great it is, because I don't have a french loaf

pan (knowing I could just use a cookie sheet.) This sounds perfect!

I've been roasting brussels sprouts pretty often in the last month.

They are awesome! Addictive! Oh, and good for you, too. Hehe!

Anyway, I usually get the frozen bag of baby sprouts (convenience,)

defrost them in the microwave, dry a bit, toss with olive oil,

coarse salt, whatever, place in a pan and bake (350F also) for about

30 minutes, stirring/checking randomly. The best parts are the

blackened leaves that fall off. So yum! My kids all like them, too,

which is weird because two of the three have green veggie phobia.

You use frozen ones?? I've been afraid to try them!! It sure WOULD be more convenient! And probably quicker to cook too! Do you know if it tastes the same as fresh once browned?? I've not used the fresh, but I heard that the frozen don't get quite

as crispy on the outside, but I really love them. The dropped leaves

do get crispy. I made them every day for lunch one week. Crazy. Hehe.

Oh, the other thing I do is sprinkle a little balsamic vinegar on

them once done. Mmmm!

OK, ok FINE! I’ll get some today and

try this. The balsamic cinches it, actually. My ds will anything with Balsamic

sprinkled on it. (He learned that from me…) We’ve been eating a lot

of kale and I’m getting tired of it. Something new would be nice.

How do we fix the kale, you ask? J We like Dinosaur Kale

best (I found it at WF, never seen it before). First sauté lots of onion and

garlic in a very large pot. Wash the kale and strip away the tough stem, chop

or tear to bite-size pieces. When the onions are almost carmelized, add the

kale, stir and cover. The water from washing is enough to steam it usually, but

you can add more. You can add reconstituted dry tomatoes also.

We eat Kale with .... ugh...we do bacon bits and onion. Use the bagged bacon bits and revive them a bit. We eat the regular green kale but again....when the onions are almosts carmelized, throw the kale in just like Laurie. Steams itself silly. Yummmmm.
