Hi ..........and anyone else interested in this FYI material, which actually is geared toward celiacs (people with definate gluten intolerance).

Though spelt should be avoided by celiacs, Amaranth and others "of that ilk" contain no glutens.

Gluten is actually derived from the following grains:

Barley, oats, spelt, rye, and wheat.

The following grains do not contain gluten, but are on the avoid list for most celiacs, because of cross contamination. Cross Contamination is when two grains are grown in the same field using a rotation method. Example: Wheat and Buckwheat are often grown in the same field and you may get cross contamination from one crop to the next.

Amaranth, buckwheat, millet, teff.

Hi ,

Interesting about the amaranth, I wonder why my info says it does have

gluten and yours doesn't? That's what makes me nuts about all the diet

theories: it is so hard to get the truth!!! I have heard a contradiction

to just about everything I've read about diet. Arrgghhh!!

I was amazed looking at this list; seems like it contains just

about everything on the shelves at the market! Although I shouldn't be,

because I have become an inveterate label reader ever since I started this

diet - it's almost the truth that I cannot eat anything that comes with

a label, what with the restriction on wheat and dairy!

A word of warning though about tamari sauce. Some do contain wheat,

I know because I just read the labels of all of them at Whole Foods - surprised

me because I thought the same thing. So as with any of this stuff, read

the label!
