I haven't found a brand of chocolate pudding mix that didn't have red 40 in it. Stupid, isn't it? I'm going to try this recipe without it and see what happens. It sounds really, really good! I cut ot the seeds before I grate the zucchini. it says 1 hr 20 min I left it for an hour and that was too long. I would check at 40-45 min. As far as leaving out the pudding? that is up to you. I guess if it was already made pudding it wouldn't work. The reason for pudding mix in cakes is usually to make it more moist. I usually just use buttermilk instead of the milk or liquid it calls for and that makes a really moist cake. I used it also in recipes. But, I also like it all by itsself. I'll get a great big glass and load it with pepper, and drink away. Tom makes faces at me. He can't stand the stuff. One of my favorite things is frozen buttermilk! I freeze it then eat it with a spoon after salting it. I like to drink buttermilk when eating popcorn, too.
