I have no clue why the butter separated but the same thing happened to my daughter this year and she makes it all the time. The only thing I can think of is maybe the heat was too high. Also I use a teflon coated pan and a wooden spoon to stir. Not sure if it matters or not. It has never happened to me and I have been making it for 20 years! Hope your next batch turns out okay.
