You've just reminded me - I 've been meaning to ask you how you prepare your

mushrooms. I have a vague recollection that you wrote a long time ago that

you cook up enough for a week. What do you add, and do you freeze them?

Lately I've been cooking the protein with a few basic spices - chicken,

beef, or whatever. When I cook dinner it's just a matter of adding the fresh

greens to a serve of precooked meat. Sometimes I add a fresh mushroom, or

dried mushrooms.

I buy the packaged presliced, precleaned (but raw) mushrooms from Trader

Joe's, which saves me all the cleaning. I don't know how much a box

weighs, Bea, but I generally use 3 T olive oil and 1 T butter to saute 2

boxes in. Before it cooks down, the mushrooms fill a 12-inch, high

sided frying pan. I heat up the olive oil/butter mix, dump in the

mushrooms then while they're cooking and using a big knife, cut them up

some more into even smaller pieces while they're cooking. This keeps

them moving around. The whole thing takes no more than 15 minutes...then

I put the cooked mushrooms in a Tupperware container in the refrigerator

and take out individual servings and nuke 'em to reheat They add bulk

and no carbs at all to lots of food. And I love mushrooms anyway.

This much usually lasts me about a week to 10 days.

I'm going to TJs today so I'll check to see how much one box weighs and

I'll get back to you. Of course mushrooms are so lightweight...I don't

expect 'em to weigh much.

Hi, Bea...Just came back from Trader Joe's ... one box of sliced raw

mushrooms is 8 ounces...so for the amount of olive oil/butter I

mentioned earlier, I use 1 pound of raw mushrooms. Hope this helps!

Vicki,

Thanks so much. I am about to go out shopping and for a walk at the beach -

my first since I go the flu.

So I'll buy 500 gm of mushrooms (that's about 1 pound) and cook them up -

using your recipe.

I too love mushrooms. One of my snacks yesterday was lean bacon and

mushrooms.
