I'm not quite sure - but it is often what is meant when you see

" flour improver " on a bread ingredient list. Helps it rise. It is

automatically contained in some of the sachet yeasts labelled extra

fast. I had some problems with bread collapsing at one side - really

weird. The helpline said it was the flour - variable gluten content -

and suggested the Vitamin C.

Anybody got any recommendations re: Breadmakers? I want one for my birthday

next month.

Must have features etc etc?

Funny you should ask that as I cut out a bit from Saturday's paper about

bread makers. Don't know why as I have one already but maybe I had a

premonition you would ask! I've tried to scan it in and send to you but

with no success so far. Will get DS2 onto the job when\if he emerges from

his lair!

Lesley - is that the one that the Telegraph are selling? A friend of mine has

it and says its wonderful.

No, sorry, I didn't make myself clear. It was a survey of bread makers they

had. DS2 still isn't up (its 12.30pm!!!) so I haven't been able to scan it

in and send it. BTW, I have a Morphy s, which makes big loaves, up

to 21\2lb.
