Well, weigh in went well this morning. I lost 1.6 :) I tried the spinach pie

recipe for dinner. I didn't like it. It wasn't the spinach that I didn't

like, it was the texture. To me, it was kind of slimey. :( I followed the

recipe exactly, and the knife came out clean. I don't know what was wrong. We

through it into the trash after everyone had a few bites and ended up just

eating grilled cheese sandwiches. LOL! It was a lot like quiche, except with

spinach. The only difference is, I don't remember quiche being slimey. I'm

posting the recipe below if anyone wants to take a look. I can honestly say I

won't be adding this recipe to my website. LOL!

SPINACH - PARMESAN PIE

Serves - 4

3.5 Points per Serving

1 TABLESPOON FF Margarine (0)

3 TABLESPOONS OF MINCED ONIONS (0)

1 CUP OF Fat Free COTTAGE CHEESE (3)

1/2 CUP Reduced Fat BISQUICK (4.5)

1 CUP OF FF MILK (2)

1 TABLESPOON LEMON JUICE (0)

1/4 TEASPOON PEPPER (0)

Egg Substitute equivalent to 3 eggs (3)

3 TABLESPOONS Reduced Fat PARMESAN CHEESE (1)

1/4 TEASPOON OF GROUND NUTMEG (0)

1 PACKAGE 10 OZ FROZEN CHOPPED SPINACH, THAWED AND SQUEEZED TO DRAIN (0)

HEAT OVEN TO 350 DEGREES

GREASE 9 INCH PIE PLATE (I USED PAM)

MELT MARGARINE IN SKILLET OVER MEDIUM FLAME.

ADD IN ONIONS AND SPINACH STIR FOR ABOUT 3 MINUTES

SPREAD SPINACH AND ONIONS MIXTURE IN THE BOTTOM OF PIE PLATE

SPREAD COTTAGE CHEESE ON TOP

IN A SMALL BOWL MIX TOGETHER BISQUCK, MILK, LEMON JUICE, PEPPER, AND EGGS

UNTIL WELL BLENDED. POUR INTO PIE PLATE; SPRINKLE WITH PARMESAN CHEESE AND

NUTMEG

BAKE 35 MINUTES OR UNTIL KNIFE INSERTED IN CENTER COMES OUT CLEAN. COOL 5

MINUTES BEFORE SERVING.
