Oh good...someone else who hates white meat. When I visit friends over

holidays and they overcook a turkey (as they overcook all meats, but that's

another story), it works out fine as I get the drumsticks and thighs and

they the breast meat. As for slow cooking, etc, I have had some success

with that. I had mentioned the pot-roasted pork earlier. Of course, it's

been years since I've cooked that...well, let's say decades...so perhaps

the pork loin roasts I bought then were fatter than now. The only thing I

did what turkey breast back when I was still married and had family at home

was to freeze it and eventually make turkey tetrazzini with it. Now that

was good!

My local market is not going to carry organic freerange chicken anymore

because not enough people buy it. The meat manager said they end up

throwing it out. I buy some, but there's a limit to how much chicken I can

buy at one time as I have only the small freezer above the fridge. No room

in this small apartment for a freezer, either.

The last 2 years I have sprung for an organic turkey for

Thanksgiving. The first years was because of a major supermarket

strike in California and the second year was by choice. Big

difference!

A good way to roast turkey or chicken is supposed to be breast down

for a substantial part of the cooking. It's supposed to produce a

much juicier bird. I haven't been able to try it but I've read about

it and have the directions somewhere.
