This could be one of those " YMMV " things for " you " .

Cauliflower is supposedly pretty low GI, but we all react differently so your

tester is your best indicator of results for " you " . Try some cauliflower

alone & test @1 & 2 hours to see what happens.

Overcooking vegies makes them easier to digest & raises the effective GI.

" Al dente " is best, but that makes cauliflower hard to " mash " if that's your

desire.

The question is,

has anyone noticed problems with a food that is low carb and not *supposed*

to be affecting BG very much?
