One of my daughters is vegetarian, has been for 20 years (started in high school) lives at a veggie holistic health/conference center in the mountains two hours from here.l visit her there about every six weeks or so and I thank my lucky stars that I take insulin, the meals there are great but REALLY carb-heavy -- lots of brown rice and root veggies. Tofu too, of course. I've been asked to give a talk to the kitchen staff there about lowcarb options for visitors who are either diabetic or trying to lose following Atkins.
