Morning Zephyr,

Welcome back!! How was your trip?? I missed you not being here! It has been pretty quiet the last few days.

I got a Foreman grill yesterday, so we are having grilled chicken and veggies. Actually chichen fajitas with the spanish rice and ff refried beans, lettuce tomatoes, and lots of salsa.

What about everyone else??

Smothered chicken

Dessert (maybe)

I found some dessert cups (sponge cake, I think) that I love to make strawberry

shortcake with and discovered that they are only 1.5 points each! Add some

fresh fruit and a dollop of FF whipped topping and you have a delicious 2.5

point dessert!!!!!

Thanks for the note, it is good to be back. It was a very sad and stressful trip. My DH's mom is failing very quickly. One month ago she was in a wheel chair and now she is in a hospital bed and using breathing equipment. I was afraid that once she got that hospital bed she would not get out of it. We did get her to try the wheelchair on Easter Day but she only lasted 5 minutes before she began to hyperventilate. I did cook her all her favorite things for Easter and it was nice to see her happy. She got very sad the nearer the end of our visit so we left on a sad note. I am glad that we could be there even for just a short visit.

Sounds like I may have to check out the GF grill. Glad you had a pleasant Easter.

, I did this for the first time the other night and that is why I did not reply right away. First I laid foil in my jelly roll pan then I took a frozen bag of brocoli and spread it on the foil that has been sprayed with butter flavor pam- I am picky the pam has better flavor and does not let things burn for some reason I have tried it with other sprays and vegies and the pam works best. Then I sprinkle it with garlic seasoning and Prudhommes vegie seasoning bake for 15 minutes at 450 and re spray and season and toss then do another 15 minutes. I put it in in its frozen state. It is fantastic!!!! I hope this helps. I have done it with broccoli, cauliflower and asparagus . How was the edaname?

Thanks Zyphyr, Edaname was great but cooks really fast! I will try it your way and see how it works (better than mine obviously!) I will def. look for you and your star in the WP today.
