shiitakes cut into pieces has 14

grams of carbs. That would be a large amount of mushrooms!!! Most mushrooms

have

about 5 grams of carbs per cup, raw. What else was in your salad?

I have a small digital scale, but find it useful to look at things as cups

and portions thereof because my eye is bette at estimating a cup or half cup or

quarter cup than it is at estimating 50 grams. I don't have any idea of what

50 grams of something looks like, but I do know what a half cup looks like. I

use the scale to measure ounces, for the most part.

And while using grams will give a more accurate measure, I find measusring

things day after day is not something I'm going to do - brings back way too many

dieting memories that are neither pleasant nor helpfu. YMMV of course.

I would point out that weight (gram) measure is much more accurate than

cup measure. When you use a cup, there are spaces between the food

items, no matter how much you smush them together. The Salter scale I

mentioned earlier weighs in ounces as well as grams. No, I don't have

any financial interest in Salter -- wish I did -- just a happy customer.

I did a google search under Salter digital kitchen scales and there are

a lot of entries but here's the URL for basically the same scale I have:

Shiitakes are denser than many mushrooms.

The USDA site quoted:

Mushrooms, shiitake, cooked, with salt - 1 cup pieces, 145 g

21 g carb (OK, 20.71 g - close enuf)

A difference in weight would occur between the following:

1) measure 1 cup of raw mushroom pieces, then cook

2) cook mushroom pieces then measure 1 cup of them

Well, yes...I can appreciate that. I have no negative baggage about

weight issues, so I find the precision of weighing out food items quite

satisfying. Makes me feel a lot more secure about getting my insulin

dose absolutely correct.
