Is it different than that? Anyway, I'm going to the darkroom tonight (yeah!) so I will stop and get asparagus sushi for dinner. DH will have left over fish. -- What's on the menu for today? Wednesday 4-3-02 Good Morning all,I will tell you that I am definately addicted the the grill. Last night I cooked: asparagus, green beans, yellow squash, onions, red bell peppers, and of course the chicken. It was great!! Even the kids ate the veggies!Lets see....what can I fix on it today??? I can't think of anything new right this moment. I am wanting to try some shrimp and scallops, but I won't have time today.By the way, I found the Tia tortillas at Krogers yesterday.Tonight I will probably do something quick. The ceremony was one we wrote ourselves since we aren't religious, and even my very religious grandmother thought that it was lovely and moving. we spent a lot of time with our out of town guests, and then headed off for a honeymoon at the Grove Park Inn and Spa in Asheville. It was awesome! I had a bunch of spa treatments, and I spent the whole vacation relaxing. I have never felt more calm and collected that I do now. Later, I will send some pictures of the ceremony site (our backyard) and of and me. I am going back to WW tonight. I don't think I gained so much. Max 5 pounds, and it was so worth it! Now I will just get right back on track and on program and keep on losin'! Now to answer the real question, for dinner tonight, we are having veal sandwiches. I am going to saute some veal, onions, and peppers in just a little oil. I baked sour dough bread in the bread machine last night, so we will use that. On one side of the bread, I spread pesto sauce. On the other side, I spread low-fat spaghetti sauce. I put the veal, onions, and peppers on the bread and then a slice of mozzerella chesse, and bake until the cheese is melted. Yum! We may have salad with it. I am so glad to be back! I have missed you all! DH is home sick today, and I've had an allergic reaction to something (have a rash covering my chest and creeping up my face) so we'll see what I'm in the mood to do when I get home. I bought a 6.5 lb chicken and I'm starting my "rubber chicken" tomorrow Maureen - seafood is awesome on the GF grill. I love any kind! Cajun shrimp are sooooooo yummy with a little rice on the side. I also like to sprinkle a greek seasoning on the fish with a little spray ff olive oil. With fish you have to make sure you coat it a little or it will stick. Good luck! I just take leftover mashed potatoes, add 1-2 egg whites, a few tablespoons of flour, salt, pepper, and chives. If it is too thick, I will add several tablespoons of milk. Then, I " fry " them in Pam until browned and crispy. Sorry I can't be more specific, but this is something that I learned from my Mom years ago. We cook year round and at least a few times a week on the gas grill also, basically because in TX it doesn't really get too cold. THe Foreman makes the food taste better. Just my opinion of course, well mine and my family's. I am not sure what it is...the fact that it cooks both sides at once so it doesn't burn, doesn't dry out and seems to cook just perfect every time. Maureen What's on the menu for today?
