I just made Salsa Chicken for the first time, and OMG it was fabulous! I can't believe how good it was and only 4 pts. I also had 1 cup of pasta (to go with the sauce) and a large salad and I'm in heaven! SALSA CHICKEN4 points4 skinless, boneless chicken breast halves - I usedchicken tenders - 3 tenders and 3 pts per serving 4 teaspoons taco seasoning mix1 cup salsa (hot or mild, to your taste)1 cup shredded cheddar cheese (I use Kraft 2% low fat)light sour cream for garnish (optional)Preheat oven to 375 degrees. Place chicken breasts in9 x 13" baking dish. Sprinkle taco seasoning on bothsides of chicken. Pour the salsa all over the breasts.Bake at 375% about 25 - 30 minutes or until chicken istender and juicy and juices run clear. Sprinkle thecheese on the breasts evenly and bake another 5minutes or so until melted and bubbly. I just bought my 1st pampered chef stoneware and am impatiently awaiting it's arrival. I got the cooker so I can roast chickens in it. I will definitely try this recipe as soon as I get it. My DH does not have a weight problem and is not interested in eating the kinds of food I eat. Many times we cook together - he makes his meal and I make mine as we are both real busy people. Sometimes when he doesn't feel like cooking he will have what I am making as long as it is something he likes. Our kids are grown and out of the house so this works pretty well for us. I don't know the ages of your children but if they are old enough they could help out with the cooking and discover that the "low cal" dinners are really pretty good. My kids will NOT eat the "low cal" dinners I make for us. So i end up making 2 dinners at least. I made the kids homemade pizza (hubby was so mad at me) I made a Gortons fish filet and herbed potato wedges with a salad with ff italian dressing for me Hubby had leftover Lemon Fried Chicken (from the files section here) baked french fries and corn. ours was under 10 points for dinner. My teenage son wasn't thrilled when I started serving salad at every dinner either. He has adjusted and I do buy him his Mountain Dew and a few other treats, but I figure at the high school he can buy the junk food he wants. He says now that he actually isn't eating as much junk food!! He has seen the change I have gone through and he says he wants to be healthy, of course he is 6'5 " and weighs 150 pounds soaking wet. (No weight problem there)! He has been very supportive of me though!! Hang in there and try some of the yummy WW recipes, my family doesn't even notice. My husband even tried a Boca Burger last night and said it tasted great!!
